The best laid plans

I was proud of myself, doing some dinner prep work early. By the time 4:00 rolls around, I often feel like collapsing instead of cooking dinner. But today, we rode bikes after lunch, then came back for "quiet time" while I did some dinner prep. I was psyched to try this enchilada recipe I saw on Jody's food site.

So I grated cheese. I chopped onions. I prepared the enchilada sauce. I cut up chicken. In fact, I prepared & chopped twice the ingredients so I could put a big batch in the freezer. Yeah, I patted myself on the back big time, getting that all done by 3:00.

Then I started cleaning up my mess. Seems I grabbed the Ginger instead of the Cumin when I was making the sauce. Because, you know, the words Ginger and Cumin look so much alike. GAH. Holy culinary gaffe.

I tasted the sauce, and it's not half bad. Not your traditional enchilada sauce of course... We'll see how it tastes on the end product tonight.

Hopefully nothing a little sour cream can't fix!

Hey, it's not a mistake. It's innovation!

God bless sour cream. What a grea idea to make extra for another day when you don't have time to prep.

Let us know how it goes. Sounds yummy either way. I love the taste of ginger.

It was good anyway... I added some cumin after the fact. Think I'll skip the ginger next time though!

*heehee* Think we've all made mistakes like that at one time or another...

Ginger is never a bad thing. :)
